Yesterday we had our first snow fall.  Weather up to then had been glorious.  Enjoy the photos of the mandevilla vine, which had remained abnormally gorgeous through October 27th:

Happy Labor Day

It just doesn’t seem possible that Labor Day is already here and we are entering Indian Summer here in Vermont – actually the most beautiful time of year.  Less people, warm days, cool evenings, lots of activities.   Below is a recipe for Ratatouille – which utilizes all those ingredients still available at our (and hopefully your) farmers markets.  As you know by staying at Ormsby Hill, we are huge supporters of buying locally.

Roasted Vegetable Ratatouille
3 small eggplants (about 1 pound), cut
into 3/4-inch dice*
1 pound small zucchini, cut into 1-inch
dice
1 large onion, cut into 1-inch dice
1 large yellow pepper, cut into 1-inch dice
1 large red pepper, cut into 1-inch dice
4 garlic cloves, sliced
1/4 cup extra virgin olive oil
Kosher salt
Fresh ground black pepper
1 pound Roma tomatoes, cut into 1-inch dice
3 tablespoons minced fresh oregano
2 tablespoons minced fresh thyme

Preheat oven to 450 degrees.

Combine tomatoes, oregano, thyme and black pepper in bowl and set aside.

Toss together eggplant, zucchini, onion, yellow pepper, red pepper, garlic and olive oil in large bowl.  Season with salt and pepper.  Place in roasting pan.  Bake 45 minutes, stirring once during cooking.

Stir in the tomato mixture and bake for an additional 25 minutes.

Serves 8 as a side dish

*May substitute a large eggplant

Contrary to what you may see or hear on the news, Manchester is doing just fine after Hurricane Irene paid us a little visit on Sunday.  All the shops are open, restaurants are still serving their wonderful food – and we are functioning just perfectly.  These photos were taken just before sunset this evening.

QUINCY

Quincy

We have sad news to bring you.  Quincy, Chris’s  fabulous baby boy and “only child”, passed away on Monday, July 11th, at the young age of 6.   We will never know the exact cause, but due to the rapidity of his decline, it was highly likely a rapidly growing tumor on his spinal cord in the neck region, based upon veterinary testing.

He was a total joy to us and to all our guests.  His claim to fame was that he truly smiled as he greeted each guest (just wish we had had the opportunity to get a photo – but he just moved too quickly!), and brought out THE toy of the day, and, most importantly, the chance to be patted.    Thank you for being a part of his happiness.  He truly will be missed.

Spring in Vermont!!

The last couple of weeks has seen the lawn greening up, plants all coming to life, and new birds arriving.  Enjoy the photos -

The rose-breasted grosbeak.  Without a doubt, one of our most favorite birds to have visit us on our feeders outside the Gathering Room windows.  It really is Spring here in Manchester, Vermont.

WHERE IS The Inn at Ormsby Hill??

About 4 weeks ago, a big wind  storm snapped our sign post in half and brought our sign to the ground.  Since that time, we have been without a sign.  Amazingly, all our guests arrived without incident!!!!!!!

How fortunate for us that the Vermont Country Store has chosen The Inn at Ormsby Hill as a site for taking photos of items to appear in their catalogs.   Some are new items, some are for Christmas, and one will be for a cover shot.  I took photos of the work in progress.
